The Le Creuset Toughened Non-Stick Paella Pan 32cm with its body of aluminium is very fast to react when using it on gas, but being coated, it cannot withstand very high heat. On induction it will take a bit longer to heat up. Being coated makes it easier to clean, but do clean the pan properly each time with soapy water and a scourer suitable with non-stick. Just using a sponge can often leave micro residues of food which could slowly make the pan “stick”.
