Designed in consultation with professional chefs, this award winning Signature 30cm / 12 inch flexible slicing knife has a long thin blade which allows for good reach and accuracy when slicing delicate meat, poultry or fish. The flexibility of the long blade makes it perfect for cutting thin slices of smoked salmon or cured meats, and ensures ease of handling around the bone. An additional use is as a cake or sponge splitter, creating fewer crumbs than a serrated knife, with the blade length ideal for cutting slices of large cakes too.

Features

  • Long, thin, flexible blade: Good reach and accuracy when slicing delicate meat, poultry or fish.
  • Genuinely versatile beyond meat: Also works as a cake or sponge splitter, creating fewer crumbs than a serrated knife.
  • Japanese-style 15 degree blade edge: Ultimate sharpness, precision and ease of cutting.
  • Ergonomic handle: Shaped for comfort, balance and minimised fatigue.

Specifications

  • Blade length: 300mm
  • Weight: 200g
  • Material: German DIN 1.4116 Stainless Steel
  • Guarantee: Lifetime

Care

  • Washing: Handwash recommended. Rinse to remove food traces, then wash gently in warm soapy water with a soft cloth. No need to soak. Dry each knife thoroughly and individually, and apply a non-abrasive metal polish for the best finish. Avoid scouring pads or abrasive cleaners, as these will scratch the surface.
  • Chopping boards: Use wood or soft plastic boards to keep the blade sharp for longest. Avoid glass, stone, metal or very hard bamboo, which can dull or damage the edge.
  • Handle care: Periodically apply a food-safe mineral oil to the handle to maintain its colour, wiping off any excess.

Questions and Answers

Q: Is it dishwasher safe?
A: No, handwashing is recommended. Dishwashers can dull the blade faster and, over time, affect the handle.

Q: What's it best used for?
A: Slicing delicate meat, poultry or fish thinly, such as smoked salmon or cured meats, and also splitting cakes or sponges.

Q: Why use it for cake rather than a serrated knife?
A: It creates fewer crumbs than a serrated blade, and its length suits cutting slices of large cakes too.
