To bake-blind i.e. to pre-cook the pastry case without its filling, simply line the baking tin/dish with pastry and prick it all over with a fork. Line with foil or baking parchment then spread a layer of the ceramic beans evenly on top. The beans will keep the pastry flat and dry preventing a soggy base when filled.
