Chocolate and Pear Muffins
These Chocolate and Pear Muffins are perfect with a cup of tea or coffee. They are moist and fluffy, super rich, not too sweet, with a juicy sliver of succulent pear.
Ingredients
- 200 g plain flour
- 50 g cocoa powder
- 120 g icing sugar
- 110 g butter
- 40 g olive oil
- 100 g dark chocolate, broken into small pieces
- 1 tsp bicarb. of soda
- 1 tsp baking powder
- 150 g milk
- 2 medium eggs
FILLING
- 2 pears (not too ripe)
Method
- Preheat the oven to 180°C (conventional oven)
- Halve and core the pears, then cut each half into thirds.
- Place the muffin ingredients in the Stand Mixer bowl and work into a creamy dough using the wire whisk (speed setting 2–4). Stop mixing as soon as the ingredients are well combined.
- Divide the mixture evenly in a 12 cup muffin tray and place a slice of pear on top of each.
- Bake the muffins in the pre-heated oven for 20 minutes.
- Leave to cool on a wire rack for 10 minutes before removing the muffins from the tray.
