What is the difference between this and the standard Barista Express?

The Impress also has 25 grind settings versus 16 on the standard Express. Everything else, including the heating system, portafilter size, and manual steam wand, is essentially the same.

The Barista Pro has 30 grind settings, ThermoJet heating that is ready in 3 seconds, and an LCD display, but no assisted tamping. Do I still need to learn anything, or does the machine handle everything?

The step up from the standard Barista Express is meaningful. The Impress system and Auto Dose Correct are not just conveniences. They remove genuine sources of variability that take experienced home baristas months to iron out manually. If you are starting out, that head start is worth having.
You still need to learn grind size. The machine handles dosing and tamping, but grind size remains the primary variable you control. The pressure gauge makes this considerably less guesswork. Aim for the needle to sit in the espresso range during extraction, and adjust from there.
Twenty-five grind settings is a meaningful upgrade over sixteen. More steps between the finest and coarsest settings means finer adjustments, which matters when you are trying to dial in a specific bean or roast. The extra range is particularly useful when switching between different coffees with different roast profiles.

Care & Use Instructions
Before first use: Remove all packaging. Install the water filter in the holder and place it in the water tank. Fill the tank with fresh water and run several blank shots through the group head to flush the system. Run the grinder briefly to clear any residue from manufacture.
Daily maintenance: After steaming milk, purge the steam wand briefly and wipe immediately with a damp cloth. Rinse the portafilter and filter basket after each use. Empty the grounds container and drip tray regularly.
Cleaning the Impress mechanism: Wipe the Impress Puck System tamper and dosing area with a dry cloth after each use to remove any retained grounds. The funnel and surrounding area can be brushed clean using the included cleaning brush.
Weekly cleaning: Remove and wash the drip tray, water tank, and milk jug. Use the cleaning brush to clear the group head and grinder chute. Wipe down all exterior surfaces with a damp cloth.
Regular backflushing: Use the cleaning disc and a cleaning tablet to backflush the group head periodically. This clears built-up coffee oils from the internal pathways and keeps extraction clean and consistent.
Descaling and filter replacement: Replace the water filter every 2 to 3 months. If you notice a change in extraction quality or machine performance, use the included descale powder and run the descaling programme according to the instruction manual.
For best results: Use fresh quality beans stored in an airtight container. Use the pressure gauge to guide grind adjustments: aim for the needle to sit in the espresso range during extraction. A 25 to 30 second shot time is a good target. Purge the group head briefly before locking in the portafilter.
