Joseph Joseph Elevate Steel Knives Carousel
The Joseph Joseph Elevate Steel Knives Carousel addresses a common kitchen hygiene concern: knife blades touching work surfaces between cutting tasks. Each knife in this five-piece set features weighted handles with integrated tool rests that elevate the blade when you set the knife down, preventing contact with potentially contaminated worktops whilst reducing mess from food transfer.
The set includes five essential knives crafted from Japanese stainless steel with ergonomic steel handles: a 9cm paring knife for detailed work like peeling and trimming, an 11cm serrated knife for tomatoes and delicate items, a 14cm santoku knife for precision slicing and dicing, a 20cm bread knife for crusty loaves, and a 19cm chef's knife for general food preparation. These knives are housed in a sleek rotating carousel block that saves space and provides easy access.
The stainless-steel block features magnetic knife slots that hold each blade securely, a fingerprint-proof coating that maintains its appearance, and a non-slip base for stability. At 37.5cm tall with a compact 13.2cm footprint, the carousel occupies minimal worktop space whilst keeping knives organised and accessible.
Key features:
- Elevate technology: Weighted handles with integrated rests keep blades elevated off work surfaces, improving hygiene and reducing mess
- Complete knife set: Five essential kitchen knives covering paring, serrated cutting, santoku precision, bread slicing, and general preparation

- Rotating carousel block: Space-efficient design with easy-access magnetic slots holds knives securely

What Customers Ask About Joseph Joseph Elevate Steel Knives Carousel
Which five knives are included in the set?
The set includes five essential kitchen knives:
- 9cm paring knife for detailed work like peeling and trimming,
- 11cm serrated knife for tomatoes and soft-skinned items,
- 14cm santoku knife for precision slicing and dicing,
- 20cm bread knife for crusty loaves and baked goods,
- 19cm chef's knife for general food preparation.
This combination covers the essential cutting tasks in most home kitchens.
How does the Elevate technology actually work?
Each knife handle is weighted and designed with a small integrated rest or projection near the blade end. When you place the knife down on a worktop, this rest contacts the surface first, tilting the handle downward and lifting the blade end slightly off the worktop. This simple mechanical design means the sharp edge never touches the work surface, preventing cross-contamination from raw meat juices or other food residues and keeping your worktop cleaner.
What's the difference between the santoku and chef's knife?
The 14cm santoku knife features a straighter edge and sheep's foot blade tip, making it excellent for precise up-and-down chopping and creating uniform slices. The 19cm chef's knife has a curved blade that facilitates rocking motion during chopping and a pointed tip for detailed work. The santoku excels at slicing vegetables and boneless meats with precision, whilst the chef's knife offers versatility for a broader range of cutting techniques. Many cooks find having both useful for different tasks.
Does the carousel rotate smoothly with all knives in place?
The carousel is designed to rotate smoothly even when fully loaded with all five knives. The rotating mechanism allows you to access any knife without removing others or reaching awkwardly. The compact circular footprint means you can position the block in a corner or against a wall and still reach all knives by simply rotating the carousel rather than needing clear access from all sides.
Why aren't these dishwasher-safe?
Like most quality kitchen knives, these require handwashing to maintain blade sharpness and handle integrity. Dishwasher detergents are abrasive and can dull blade edges, whilst the high temperatures and water pressure can damage knife handles and affect blade-to-handle joins. The harsh environment also affects the steel finish. Handwashing takes moments and significantly extends knife lifespan whilst maintaining optimal cutting performance.

Care & Use Instructions
Before first use: Remove all packaging and protective coverings from the knives and block. Wash each knife in warm soapy water, rinse thoroughly, and dry immediately with a soft cloth. Wipe the knife block with a damp cloth and dry completely.
Daily knife care: After each use, wash knives immediately by hand in warm soapy water. Never leave knives soaking in water or sitting in the sink with other items. Rinse thoroughly and dry immediately with a soft cloth – this prevents water spots on the stainless steel and maintains the blade edge. Pay particular attention to drying the area where the blade meets the handle to prevent moisture accumulation.
Using the Elevate feature: When setting a knife down during food preparation, place it on a clean area of your worktop and allow the integrated rest to support the blade end off the surface. This works on flat, stable surfaces – the feature is less effective on curved or unstable surfaces. Even with Elevate technology, avoid placing knives on surfaces contaminated with raw meat or other high-risk foods.
Knife block maintenance: Wipe the stainless steel block regularly with a soft cloth dampened with warm water and mild detergent. Dry immediately with a soft, dry cloth to prevent water spots. The fingerprint-proof coating resists marks, but regular cleaning maintains its appearance. Do not use abrasive cloths, steel wool, or strong chemical cleaners which can damage the finish.
Magnetic slot care: The magnetic slots hold knives securely without requiring slots that dull blade edges. Insert and remove knives vertically and smoothly to avoid scraping blades against the block. If you notice any resistance, check that the blade is aligned properly with the magnetic slot.
Maintaining sharpness: Even quality knives require periodic sharpening. Use a sharpening steel regularly for maintenance honing, and have knives professionally sharpened or use a quality knife sharpener when they become noticeably dull. Proper cutting technique – using appropriate cutting boards and avoiding cutting on hard surfaces like ceramic, glass, or metal – extends the time between sharpenings.
What to avoid: Never put these knives in the dishwasher. Avoid cutting on hard surfaces – use wooden or plastic cutting boards. Don't use knives to pry, twist, or perform tasks they're not designed for, as this can damage blade edges or bend blade tips. Don't leave knives wet or store them whilst damp.
Storage: Return knives to the carousel block after washing and drying. The magnetic slots keep blades secure and separated, preventing edge damage from knives knocking together. The rotating design means you can position the block conveniently and access any knife by simply rotating the carousel.

Frequently Asked Questions
What if I've used them and don't like them?
Return them anyway. Our no quibble guarantee covers used items - if they don't do what you wanted, we'll refund you. This applies even after you've used the knives for food preparation.
How does the Half-Price Replacement guarantee work?
Valid for 2 years from purchase date. If you accidentally damage a knife (such as breaking a blade tip or handle) or the carousel block, we'll replace the set at half price with proof of purchase and evidence of damage. Photos are acceptable. Normal wear like gradual dulling of blades isn't covered, but accidental breakage is.
How long does delivery take?
Standard delivery to mainland UK addresses can take up to 7 working days, but is usually 3-4, and is free for orders over £49. Next day delivery may be available for £9.95 on orders placed before 1pm Monday to Thursday, depending on your location and our stock levels. You can also collect from our shops in Cobham or Reigate, or our warehouse in Redhill.
Can I buy individual replacement knives if one gets damaged?
Joseph Joseph typically sells the Elevate Steel Carousel as a complete set. Individual knife replacements may not be available. If a knife becomes damaged within 2 years of purchase, our Half-Price Replacement guarantee provides the most cost-effective solution. Contact us to discuss your specific situation.
How does this compare to a traditional wooden knife block?
The carousel design occupies a smaller footprint (13.2cm square vs the rectangular footprint of traditional blocks) and provides access to all knives through rotation rather than requiring clear access from one side. The magnetic slots don't dull blade edges like traditional slot blocks can. The fingerprint-proof stainless steel maintains a cleaner appearance than wood. However, traditional wooden blocks may suit those preferring classic aesthetics or those who want blocks that accommodate additional knives beyond the included set.
Will the Elevate feature work on all worktop surfaces?
The Elevate technology works best on flat, stable surfaces. It functions effectively on most typical kitchen worktops including laminate, granite, quartz, wood, and stainless steel. On textured or uneven surfaces, the elevation may be less consistent. The feature relies on the integrated rest making contact with the surface, so extremely soft surfaces might reduce effectiveness.
How much worktop space does the carousel actually save?
The carousel's 13.2 x 13.2cm footprint is significantly smaller than traditional knife blocks which often measure 20-30cm in one dimension. The rotating design means you can position it in a corner or against a wall and still access all knives, whereas traditional blocks require clear access from the front. This makes it particularly suitable for compact kitchens or crowded worktops.
Are these knives suitable for professional use?
These knives are designed for home kitchen use. Whilst they feature quality Japanese stainless steel blades and solid construction, professional chefs typically prefer specialist knives tailored to specific tasks and may require more frequent sharpening and heavier-duty construction than home-use knives provide. For dedicated home cooks preparing meals daily, these offer excellent quality and functionality.
Can left-handed people use these knives comfortably?
The ergonomic steel handles are designed to be ambidextrous and should work comfortably for both left and right-handed users. The Elevate feature functions regardless of which hand holds the knife. The santoku, chef's, and paring knives have symmetrical edges suitable for both orientations, making them comfortable for left-handed cooks.
