The ridged version of Kuhn Rikon's Allround Grill Pan adds deep grill ribs to the same 27 x 27cm uncoated stainless steel platform. How does this differ from the smooth version?

The cooking surface is the key difference. The ridged version has deep grill ribs that create char lines and allow fat to drain away from the food, giving a grilled appearance and flavour. The smooth version has a flat surface that's better for deglazing, making sauces, and general frying where full contact with the base matters.

Is this pan dishwasher safe?

It is described as dishwasher suitable, but hand washing is recommended. If the pan is very dirty, soak it in warm water for 10 to 15 minutes before cleaning. The ridges can trap residue, so a brush is useful for getting between them.

Can I use this on all hob types?

Yes, the full-surface induction base makes it compatible with induction hobs as well as gas, electric, and ceramic.

Grill ribs do more than just leave marks. The ridges lift the food above the base of the pan, which means fat and juices run off into the channels below rather than pooling around the food. This creates drier, more intense contact heat on the raised surfaces, which is what produces the charred flavour associated with outdoor grilling.

A ridged pan is not a substitute for a flat frying pan. Ridged pans are designed for searing and grilling, not for tasks like frying eggs, making sauces, or cooking anything that needs full contact with the base. If you need both capabilities, consider owning both the smooth and ridged versions.

Preheating is even more important with a ridged pan. The ridges need to be hot enough to sear on contact, or the food will stick rather than release cleanly. Give the pan a few minutes to come up to temperature before adding any food, and avoid the temptation to move things around before they've had time to develop a crust.

Cleaning between the ridges is easier than it looks. A stiff brush or a brief soak in warm water deals with most residue between the ribs. Avoid using metal scourers, which can scratch the stainless steel, and let the pan cool before washing to prevent warping.

Uncoated stainless steel develops more flavour over high heat. Unlike non-stick surfaces, uncoated steel lets the Maillard reaction happen properly at high temperatures.
