Is this pan dishwasher safe?

A smooth surface is more versatile than a ridged one for most cooking. Ridged grill pans are great for char lines but less practical for deglazing, making sauces, or cooking anything that needs full contact with the base. A smooth surface lets you sear, braise, and deglaze in the same pan without food getting trapped between ridges.

Square pans genuinely give you more usable space. A 27cm round pan has a cooking area of roughly 572 square centimetres. A 27 x 27cm square pan has 729 square centimetres. That's around 27% more surface, which is enough to fit an extra fillet or a few more vegetable pieces in a single layer.

Uncoated stainless steel is the right choice for high-heat searing. Non-stick coatings have temperature limits and degrade over time. Uncoated stainless steel can handle the kind of heat you need to get a proper sear on meat without any risk to the cooking surface.

Fond is what makes stainless steel worth the extra effort. The brown residue that sticks to the base of an uncoated pan during searing is called fond, and it's packed with flavour. Deglazing with wine, stock, or even water lifts it into a sauce. You can't build fond in a non-stick pan because nothing sticks.

A full-surface induction base on a square pan is not a given. Many square pans have a round induction disc in the centre, which leaves the corners poorly heated. A full-surface square induction base means the corners get the same heat as the middle, which is important for even browning.
