Can I use the probe for all types of food, or just meat?
The probe settings cover five categories: beef, lamb, pork, poultry, and fish. Each has programmed target temperatures based on doneness preference. It's designed specifically for these protein types rather than as a general-purpose temperature probe.
Are the plates dishwasher safe?
The plates are removable and designed for hand washing. Sage has not confirmed dishwasher safety for them in the product specifications, so we'd recommend hand washing with warm soapy water and a soft cloth to preserve the non-stick coating.
What does the adjustable height control do?
The adjustable height control lets you reduce the pressure the top plate applies to food. This is useful for more delicate items like fish or toasted sandwiches where you don't want the filling pressed out, and it also allows you to grill thicker cuts without forcing the plates to close fully.
How does the adjustable plate tilt work?
The base angle can be adjusted so that fat drains away from the food during cooking, which is useful for fattier cuts of meat. It can also be levelled out for cooking eggs, pancakes, or toasted sandwiches where you want the surface flat.
In our experience...
Resting meat is not optional. Taking meat off the heat and resting it for a few minutes allows the juices to redistribute through the muscle fibres. Cut into it too soon and those juices run out onto the board rather than staying in the meat. The probe's rest indicator is there for a good reason.
Internal temperature is more reliable than timing. Cooking time varies with thickness, starting temperature, and how well the plates are preheated. A probe removes all of that guesswork. A steak taken off at 57°C internal will be medium-rare regardless of how long it took to get there.
Preheating the grill properly matters. A grill that hasn't reached full temperature before the food goes on will steam rather than sear, which affects both texture and colour. Allowing the plates to preheat fully before adding meat makes a visible difference to the crust.
Pat meat dry before grilling. Surface moisture is the enemy of a good sear. Excess moisture on the surface of meat turns to steam on contact with the plate, which prevents browning. Patting the meat dry with kitchen paper before it goes on takes seconds and noticeably improves the result.
Contact grilling is faster than you expect. Cooking from both sides simultaneously roughly halves the cooking time compared to a single-sided pan or grill. It's easy to overcook on a contact grill if you're used to hob timings, which is another reason the probe is worth using rather than relying on experience from other cooking methods.
