The GS-1 is the smallest stated cook's knife in the Global range with an 11cm blade, and like all cook's knives, is a multi purpose knife used for cutting, slicing and chopping. Use this knife for small kitchen work, cutting the leaves from strawberries or quartering oranges.
- Smallest Global cook's knife: An 11cm blade genuinely suited to small kitchen work.
- Multi-purpose design: Handles cutting, slicing and chopping across smaller everyday tasks.
- Acute 15 degree cutting edge: Dramatically sharper than a standard edge, and stays sharper for longer.
- Designed by Komin Yamada: Made in Japan, part of the Global GS range.
What Customers Ask About This Product
Is it dishwasher safe?
No, handwash only and dry immediately, since dishwashers can blunt and chip the blade and reduce its lifespan.
What's it best used for?
Small kitchen work such as cutting leaves from strawberries or quartering oranges.
Is it classed as a chef's knife?
Yes, despite its smaller size, this knife is classed as a chef's knife within the Global range.
In our experience...
A smaller cook's knife suits different jobs to a full-sized one. It's genuinely better suited to small, quick tasks than the reach and momentum a larger chef's knife gives.
A sand-filled hollow handle is a deliberate Global design choice. It's specifically what balances the weight of the blade, giving the knife a comfortable, controlled feel rather than being blade-heavy.
Being the smallest in its category doesn't limit its versatility. It still handles the same cutting, slicing and chopping actions as a larger cook's knife, just scaled to smaller work.

Care & Use Instructions
Washing: Handwash only and dry immediately. Sharp blades should never go in the dishwasher, as it can blunt and chip the edge and dramatically reduce the knife's lifespan.
