The GS-4 is Global's small version of the Deba Bocho knife, a small version of the G-7 Deba, a Japanese style kitchen knife used to cut mostly fish but also meat. This knife has the traditional Japanese one sided grind, so is not suitable for Western style preparation. It can be used for cutting, filleting and slicing smaller fish, a perfect small utility knife for Japanese chefs who use a larger Sashimi or Deba knife and need something for lighter work.

A one-sided grind is a genuinely different edge to a standard Western knife. It's ground on one face only, which is what gives traditional Japanese knives their distinctive cutting action, but means the technique needed is different too.
A sand-filled hollow handle is a deliberate Global design choice. It's specifically what balances the weight of the blade, giving the knife a comfortable, controlled feel rather than being blade-heavy.
This is a genuine companion knife, not a standalone all-rounder. It's specifically sized for lighter work alongside a larger Sashimi or Deba knife, rather than replacing one.

How long does delivery take?
Standard delivery to mainland UK addresses can take 5-7 working days (but is usually much quicker than that), and it's free on orders over £49. Next day delivery is available for £9.95 on orders placed before 1pm Monday to Thursday, depending on your location and our stock levels. You can also collect from our shops in Cobham or Reigate, or our warehouse in Redhill.
