The G-21 is a classically shaped boning knife, considered the standard boning knife in the Global series, and certainly the best-selling. The knife has a long, narrow blade tapered to a very fine point, allowing you to work round the bones in joints of beef, lamb or pork and cut out a sizeable piece of meat. The blade is also flexible, which is great for getting under the skin and filleting fish. There are quite a few boning and filleting knives in the Global range, but the G-21 has a bolster, useful where working with raw meat or fish can make the knife slippy, helping prevent unfortunate accidents.
- Long, narrow, finely tapered blade: Works precisely around bones in joints of beef, lamb or pork.
- Flexible blade: Also suited to getting under skin and filleting fish.
- Bolster included: Helps prevent slipping when handling raw meat or fish.
- Global's best-selling boning knife: The standard choice within the Global range.
What Customers Ask About This Product
Is it dishwasher safe?
No, handwash only and dry immediately, since dishwashers can blunt and chip the blade and reduce its lifespan.
What's it best used for?
Working around bones in joints of beef, lamb or pork, and filleting fish.
Why does it have a bolster when other Global boning knives don't?
Raw meat and fish can make a knife handle slippery, and the bolster is specifically there to help prevent accidents in that situation.
Is there a forged version available?
Yes, the GF-31 is a fully forged version of this knife.
In our experience...
A fine, tapered point is what makes precise boning possible. It's specifically shaped to work into joints and around bone in a way a blunter tip couldn't manage as accurately.
A bolster is a genuine safety feature, not just a design detail. It gives a more secure grip exactly when the knife is most likely to slip, while handling raw meat or fish.
Flexibility adds a second genuine use to this knife. The same blade that bones a joint of meat can also get under fish skin for filleting, without needing a separate tool.
