G-83 | 18cm Fluted Oriental Cook's Knife - The G-83 is similar to G-2 but the difference is purely cosmetic, such as the kink in the blade which gives the knife an 'oriental' aesthetic. However, this feature does not affect the knife's functionality. It includes flutes that prevent food from sticking to the blade during cutting. Despite its oriental appearance, the knife is not specifically designed for oriental cuisine or techniques; rather, it offers a unique shape for a cook's knife. The curved blade facilitates rocking motions while chopping, similar to a mezzaluna, making it versatile for various kitchen tasks.

G-58 | 11cm Cook's Knife - The G-58 knife, measuring 11 cm, is a slightly smaller version of the same knife, featuring the large G series handle. The shorter blade offers better control and may feel less intimidating, especially for those with smaller hands. Regardless of size, all these knives perform the same tasks in the kitchen, making the choice largely a matter of personal preference.

GS-110AN | 15cm Kiritsuke Knife - The newest addition to the Global family, is the GS-110, a small 15cm Kiritsuke Knife. A Kiritsuke Knife, traditionally much larger and over 24cm in length is used by Japanese head chefs as a multipurpose knife for slicing. Kiritsuke knives typically have very straight blades, like the Japanese Usuba vegetable knives, but with the longer blade of a Yanagiba knife. Such knives are hard to use and are usually only wielded by the most skilled Japanese chefs as a symbol of status. Our small Kiritsuke pays homage to the true knife, with a slightly curved blade to aid general cutting and function as a small chef's/cook's knife.

GS-38 | 9cm Paring Knife - The GS-38 is a beautifully designed paring knife perfect for various small kitchen tasks. It serves as a hollow handle counterpart to the GSF-15 and is commonly included in newer knife sets. Its ergonomic hollow handle ensures comfortable handling, enhancing the overall user experience.

GS-55 | 12cm Fluted Oriental Santoku Knife - The GS-55 Oriental Santoku knife features flutes that prevent food from sticking to the blade while cutting. GS-61 | 16cm Bagel/Bread Knife - The GS-61 is suitable for most types of bread and is a more affordable alternative to the full G-9. Additionally, it serves well as a utility knife for vegetables with tough skins and soft interiors, making it excellent for slicing large tomatoes.

Global Knives were first designed in 1985 by Komin Yamada and pay tribute to the Japanese Samurai sword tradition. The two most distinguishing features of Global knives are their edges and the way in which they are balanced.

The edge of a Global knife is ground into a steep, acute angle rather than a bevelled edge as is the case with most European produced knives. This straight edge results in a dramatically sharper knife which stays sharper longer.

The handles on a Global knife are made from hollow stainless steel which is then filled with just the right amount of sand to create the correct balance. Global balance their knives in this way for two reasons - this method is more precise than using a tang and bolster; and typically, Asian knives do not feature bolsters as they hinder cutting and sharpening.

Add to all this the fact that the smooth contours and seamless construction of a Global knife make them extremely hygenic and you can see why these knives are used, loved and recommended by amateur and professional chefs alike the world over.

If your desired country is not listed (USA, Australia etc.) this is most likely because couriers charge by "Volumetric Weight" i.e. a combination of how large and how heavy the package is. Just give us a call on 01737 222996 with the details of your order - we will advise the shipping costs within 24 hours  and ask if you want to proceed.

Please note that any overseas shipment is at your own risk and you will hence need to take out insurance to cover any damage in transit.

Customs forms for all international packages list the value of the contents as well as a description of the items. Any customs or import duties levied once the package reaches your country must be borne by you. Your local customs office will be able to provide you with further information.
