Robert Welch Professional Paring Knife 9cm
Precision close work - peeling, trimming, segmenting, deveining, hulling - calls for a short, light blade that responds accurately to small hand movements. The Robert Welch Professional Paring Knife has a 90mm blade ground from German DIN 1.4116 stainless steel, ice-hardened to Rockwell 57, and finished with a hand-applied 15° edge using World Edge Geometry for a sharper, more resilient cutting edge. At 81g, it is the lightest knife in the Professional range by some margin, and that lightness is deliberate: a heavier blade works against you on intricate tasks where control matters more than force.
The short blade allows the knife to follow the contours of small or irregularly shaped ingredients - navigating around the curves of a carrot, the dimples of a strawberry, or the eye sockets of a pineapple - with a degree of accuracy a longer blade cannot match. Construction is fully forged with a full tang throughout the handle, and it comes securely boxed.

What Customers Ask About the Robert Welch Professional Paring Knife
What is a paring knife for, and when would I reach for it instead of a chef's knife?
A paring knife handles the precision work that a larger blade makes awkward: peeling fruit and vegetables, trimming fat or sinew from small cuts, removing seeds, hulling strawberries, segmenting citrus, and any task where accuracy matters more than speed. You would reach for a paring knife when the ingredient is small enough that a chef's knife feels unwieldy, or when the task requires the knife tip to follow a curved or irregular surface closely. The two knives complement each other rather than competing.
Is a paring knife used in the hand or on a board?
Both, depending on the task. Peeling and trimming round fruits and vegetables is typically done in the hand, with the blade drawing toward the thumb - a technique that gives maximum control over curved surfaces. For tasks like slicing small items or fine prep work, using the knife on a board is safer and more stable. If you're new to in-hand technique, work slowly and keep cuts small and controlled until you build confidence with the motion.
Why buy a forged paring knife when cheaper options exist?
A paring knife is used on precision tasks where the blade needs to respond accurately to small movements. A forged blade is denser and holds its shape more consistently under repeated use than a stamped blade, which can flex or lose its geometry over time. The 15° edge on this knife is also sharper than most budget paring knives, which matters when you're working with soft skin fruit, fresh herbs, or anything that requires the knife to cut rather than tear. A knife that drags or loses its edge quickly on a paring task is more frustrating to use than on any other.
At 81g, is this knife too light to feel substantial?
The 81g weight is intentional rather than a compromise. Paring work is about control at close range - a heavier knife would require more effort to manage through repeated small movements and would be tiring over extended prep sessions. The full tang and forged construction still give the knife a solid, connected feel in the hand; it does not feel flimsy. If you're used to heavier knives from the Professional range, the contrast is noticeable, but most cooks find the paring knife's lighter weight an advantage for its intended tasks.
What is the hand-applied 15° edge, and does it need specialist sharpening?
The 15° edge angle is more acute than a typical European kitchen knife (usually ground at 20° or more), which produces a sharper initial edge. Robert Welch apply this by hand as part of the manufacturing process. For maintenance, a sharpener compatible with 15° geometry is needed - check your sharpening tool's instructions. The World Edge Geometry specification is designed so this edge can be maintained at home without sending the knife away for professional re-grinding.
Does this paring knife come in the Robert Welch knife block sets?
Yes. The Robert Welch Professional Paring Knife 9cm is included in both the Professional Angle Oak and Book Oak Knife Block Sets. The Book Oak set represents a saving of £97 compared to buying the block and six knives individually.

Care & Use Instructions
Washing: Hand washing is recommended to prolong blade life and handle finish. Dry thoroughly before storing. If dishwasher use is unavoidable, remove and dry promptly - prolonged exposure to dishwasher detergents and high-temperature cycles can accelerate wear on both the edge and handle.
Sharpening: The 15° edge is designed for home maintenance without specialist equipment. Use a sharpener compatible with 15° geometry and check your tool's instructions before use. Regular honing with a honing steel will help maintain the edge between sharpenings.
Storage: Store on a magnetic knife rack, in a knife block, or with a blade guard. At 90mm, this knife is easily lost or damaged in a drawer alongside larger utensils.
In-hand use: When using the knife in the hand for peeling or trimming, keep cuts small and controlled. Always cut away from fingers and maintain a firm grip on both the knife and the ingredient.
Safety: This product must not be sold to or purchased by anyone under the age of 18 in the UK.
