Samuel Groves Mermaid Hard Anodised Roaster with Integral Handles
The Samuel Groves Mermaid Hard Anodised Roaster is designed for both home cooks and professional kitchens, offering the reliability of commercial-grade construction with the efficiency of aluminium heat conduction. Available in three sizes to accommodate everything from weeknight chicken dinners to Christmas turkey, these roasting dishes deliver consistent results whilst remaining surprisingly lightweight and easy to handle.
The hard anodised surface is created through an electro-chemical process that hardens the outer layer of aluminium to twice the hardness of stainless steel, creating an indestructible surface that will never peel, flake, or blister. Over time and with proper care, the surface develops a natural patina that progressively enhances its non-stick properties.
Key features:
- Professional-grade construction: Trusted by commercial kitchens for all-day baking whilst remaining accessible for home use
- Three versatile sizes: 12-inch for smaller roasts, 14-inch for family meals, 16-inch for entertaining or turkey
- Integral handles: Built-in handles provide secure grip and won't loosen or detach over time
- Superior heat distribution: Aluminium conducts heat quickly and evenly, eliminating hot spots for consistent browning
- Robust yet lightweight: Won't buckle or warp in the oven, yet remains easy to manoeuvre when loaded
- Developing non-stick surface: With correct use, the hard anodised surface builds a natural patina over time
- High temperature tolerance: Oven-safe to 240°C (475°F, Gas Mark 9)
These roasters suit anyone seeking professional results without the weight penalty of cast iron or the maintenance requirements of uncoated carbon steel. The choice of professional chefs worldwide, Mermaid bakeware consistently produces high-quality results for a lifetime.
What Customers Ask About Mermaid Hard Anodised Roasters
Which size roaster should I choose?
The 12-inch (22cm x 31.5cm) suits small roasts, chicken, and vegetables for 2-4 people. The 14-inch (26.5cm x 37cm) accommodates medium roasts and chickens for 4-6 people. The 16-inch (30.5cm x 42cm) is designed for large roasts, turkey, and entertaining 6-8+ people. Measure your oven interior to confirm fit - the 16-inch requires at least 46cm of oven width.
What makes hard anodised aluminium different from regular aluminium?
Hard anodising is an electro-chemical process that hardens the outer layer of aluminium to create a surface twice as hard as stainless steel. The dark finish will never peel, flake, or blister. Regular aluminium bakeware lacks this hardened surface and may be more prone to warping or scratching. The hard anodised surface also develops a natural non-stick patina over time when cared for correctly.
Will this work on my hob?
This roaster isn't compatible with induction hobs, but you can still make a gravy from the juices after roasting on any other type of hob or by pouring hot water in the pan and stirring.
How does this compare to stainless steel roasting dishes?
Aluminium conducts heat approximately 15 times more efficiently than stainless steel, meaning faster heating and more even temperature distribution throughout the roasting dish. This eliminates hot spots that can cause uneven browning. Aluminium is also significantly lighter, making it easier to handle when loaded with a heavy roast. Stainless steel offers easier cleaning and dishwasher compatibility, whilst hard anodised aluminium develops improved non-stick properties over time with handwashing.
Why are there small marks on the surface?
The roaster may display three small contact points where it was held during the hard-anodising process. This is a normal part of the manufacturing process and will not affect the roaster's performance, heat distribution, or durability. These marks confirm the pan has undergone the proper hard-anodising treatment.

Care & Use Instructions
Before first use: Wash with warm water and mild detergent. Dry thoroughly. You may apply a thin film of cooking oil and heat in a low oven (150°C) for 30 minutes to begin developing the non-stick patina, though this is optional.
Daily cleaning: Allow the roaster to cool before washing. Handwash with warm water and mild detergent using a soft cloth or sponge. Avoid abrasive scourers which can damage the developing patina. Dry immediately and thoroughly to prevent water marks.
Avoid: Dishwashers - harsh detergents interfere with the natural non-stick patina development. Never use metal scourers or abrasive cleaning products. Do not soak for extended periods. Avoid thermal shock by not placing a hot roaster directly into cold water.
For stubborn residue: Fill with warm water and a small amount of washing-up liquid, then heat gently on the hob or in a warm oven to loosen baked-on food. For very stubborn marks, make a paste of bicarbonate of soda and water, apply gently, then rinse thoroughly.
Storage: Ensure completely dry before storing. If stacking multiple pans, place kitchen towel between them to prevent scratching. The hard anodised surface is extremely durable, but proper storage extends its life further.
Developing the patina: Over time and with regular use, the surface develops a natural non-stick patina. This is desirable and improves the roaster's performance. The patina may appear as a slightly darker or more lustrous surface in high-use areas.
Why Buy From Art of Living?
Founded in Reigate in 1972, we've spent over five decades helping customers select quality cookware and bakeware. We've been twice nominated for the Excellence in Housewares award for customer care. We stock Samuel Groves Mermaid bakeware because it represents the professional-grade construction and reliability we've valued throughout our 52 years in business.
Our Expertise Promise
Since 1972, we've observed that customers who invest in professional-grade bakeware like Mermaid hard anodised typically replace it less frequently than those who purchase budget alternatives. Frequently Asked Questions
What if I've used it and don't like it?
Return it anyway. Our no quibble guarantee covers used items - if it doesn't do what you wanted, we'll refund you. This applies even after you've cooked with it. We've offered this guarantee since 1972 because we believe customers shouldn't take a risk when purchasing bakeware.
How does the Half-Price Replacement guarantee work?
Valid for 2 years from purchase date. If you accidentally damage this roasting dish, we'll replace it at half price with proof of purchase and evidence of damage. Photos of the damage are acceptable. This applies to all three sizes.
How long does delivery take?
Standard delivery to mainland UK addresses can take up to 7 working days, but is usually 3-4, and is free for orders over £49. Next day delivery may be available for £9.95 on orders placed before 1pm Monday to Thursday, depending on your location and our stock levels. You can also collect from our shops in Cobham or Reigate, or our warehouse in Redhill.
Why can't I use this in the dishwasher?
The hard anodised surface benefits from handwashing to preserve its developing natural non-stick patina. Harsh dishwasher detergents can interfere with the patina development that makes the pan progressively more non-stick over time. Handwashing with warm water and mild detergent takes less than a minute and protects your investment.
Will metal utensils damage the surface?
Metal utensils can be used with care, though we recommend wooden or silicone tools for everyday use to maintain the developing patina. The hard anodised surface is extremely durable - twice as hard as stainless steel - but aggressive scraping with metal can still mark it over time.
How does the lifetime guarantee work?
Samuel Groves offers a Limited Lifetime Guarantee against manufacturing defects. This covers issues with materials or workmanship under normal domestic use. It does not cover damage from misuse, accidents, or wear from commercial use. Contact us if you experience any manufacturing-related issues and we'll work with Samuel Groves to resolve them.
Can I use this under the grill?
Yes, as the roaster is oven-safe to 240°C, it can be used under a domestic grill. Ensure the roaster is positioned so the handles don't extend beyond the grill compartment, and use oven gloves when handling as the integral handles will become very hot.
