Before first use: Remove all packaging and labels. Wash both the pan and insert in warm soapy water, rinse, and dry thoroughly. You may optionally season the pan interior by rubbing a thin layer of vegetable or corn oil over the surface, heating gently, then wiping clean once cooled.
Poaching eggs: Fill the base pan with 2-3cm of water—enough to generate steam but not touching the bottom of the insert. Bring to a gentle simmer (not a rolling boil). Lightly oil or butter each mold in the insert. Place the insert over the simmering water and crack one egg into each mold. Cover with a lid if available.
