How do I sharpen the GLOBAL G-110?
GLOBAL recommends using their own sharpening tools, which are designed specifically for the 15-degree edge angle. A whetstone or the GLOBAL MinoSharp ceramic wheel sharpener are both good options. Avoid using a standard honing steel or V-type sharpener, as these are not suited to the convex edge geometry.

The edge angle is the most important difference between Japanese and European knives. Western kitchen knives are typically ground to 20-25 degrees per side. GLOBAL's 15-degree convex edge is noticeably sharper out of the box and slices through meat with much less resistance, which is often the first thing new owners comment on.
A taller blade makes a real difference at the BBQ.
