The Global G-20 Flexible Filleting Knife features a specialised design with a 21cm blade tailored for skinning and filleting large fish. The G-18, G-19 and G-20 are a family of larger flexible filleting knives in the Global filleting and boning knives collection, with large G series handles designed for heavier work. We recommend these knives for filleting the biggest types of fish, trout, salmon, cod and more, where a much larger knife is needed and a smaller knife is inadequate.
- 21cm flexible blade: Tailored specifically for skinning and filleting large fish.
- Large G series handle: Designed for heavier work than the standard range.
- Ultra sharp 15 degree cutting edge: Effortless, precise cuts through larger fish.
- Perfectly balanced ergonomic design: Comfortable control through longer filleting sessions.
What Customers Ask About This Product
Is it dishwasher safe?
No, handwash only and dry immediately, since dishwashers can blunt and chip the blade and reduce its lifespan.
What's it best used for?
Skinning and filleting large fish such as trout, salmon and cod.
What is a filleting knife used for?
A highly specialised kitchen knife for preparing, skinning, deboning and filleting fish. It has a thinner, more flexible blade than a boning knife, which bends to glide smoothly along bones and separate the maximum amount of meat without wasting flesh.
In our experience...
A larger flexible knife suits genuinely different fish to a smaller one. For the biggest fish like salmon or cod, a smaller filleting knife simply doesn't have the reach or flex needed.
Flexibility is the whole point of this knife's design. That flex is specifically what lets the blade follow bone contours closely, minimising wasted flesh.
A sand-filled hollow handle is a deliberate Global design choice. It's specifically what balances the weight of the blade, giving the knife a comfortable, controlled feel rather than being blade-heavy.

Care & Use Instructions
Washing: Handwash only and dry immediately. Sharp blades and tines should never go in the dishwasher, as it can blunt and chip the edge and dramatically reduce the lifespan.
