GreenPan Copenhagen Aluminium Non-Stick Casserole with Lid
The GreenPan Copenhagen casserole combines the versatility of a wide, shallow shape with ceramic non-stick technology. Available in two sizes—20cm (3.1L) or 24cm (4.9L)—this casserole suits one-pot cooking tasks: browning ingredients on the hob, adding liquid for braising or simmering, then moving to the oven if needed. Its Thermolon Infinity Pro coating is enhanced with diamonds for durability and is fully PFAS-free, offering an alternative to traditional PTFE-based non-stick surfaces.
Key features:
- Casserole design: Wide, shallow shape provides surface area for browning meat or vegetables before adding liquid, making it more versatile than narrow saucepans for one-pot meals
- Two sizes available: 20cm (3.1L) for 2-4 people, or 24cm (4.9L) for 4-6 people—choose based on your typical household cooking needs
- Thermolon Infinity Pro coating: Ceramic non-stick surface infused with diamond particles for enhanced scratch resistance, free from PFAS, PFOA, lead, and cadmium
- Includes tempered glass lid: Allows monitoring without lifting, retains heat and moisture, includes steam vent
- Magneto induction base: Aluminium body with magnetic base layer works on all hob types including induction, gas, electric, and ceramic
- Oven capability: Oven safe to 220°C for finishing dishes under the grill or completing cooking in the oven
- 25% extra cooking surface: Optimised shape provides wider usable base area compared to standard casserole dimensions
- Matte stainless steel handles: Stay-cool design on both casserole and lid contributes to the Copenhagen collection's minimalist aesthetic
This casserole suits home cooks who want PFAS-free non-stick performance for one-pot meals, braising, and dishes requiring both hob and oven cooking.
Which Size Should You Choose?
20cm Casserole (3.1L)
Best for households of: 2-4 people for most meals
Typical uses: Pasta for 2-3 people, vegetables for 4, soup for 3-4 servings, braising 2-3 chicken breasts, rice dishes for 4-6 servings, one-pot meals for small households, everyday family cooking.
Choose this if you: Cook for 2-4 people regularly, want a lighter pan for easier handling, have limited storage space, primarily cook everyday meals rather than batch cooking.
Weight: Lighter and easier to manoeuvre when full
24cm Casserole (4.9L)
Best for households of: 4-6 people, or 2-4 people who batch cook
Typical uses: Pasta for 4-5 people, batch cooking soups or stews, braising larger joints of meat, curry for 6 people, risotto for 4-6, family gatherings, meal prep for the week ahead.
Choose this if you: Regularly cook for 4+ people, frequently batch cook, entertain often, want maximum versatility, prefer one larger pan over multiple smaller ones.
Weight: Heavier when full, requires more storage space, but provides greater capacity
Still Unsure?
Consider which scenario applies more often: If you regularly think "I wish this pan were bigger" when cooking, choose 24cm. If you often cook smaller quantities and value lighter handling, choose 20cm. For most households, the 24cm offers better long-term versatility.
What Customers Ask About This Casserole
What's the difference between a casserole and a saucepan?
A casserole has a wider, shallower profile compared to a saucepan's narrower, taller shape. This design provides more surface area for browning ingredients before adding liquid, making it better for one-pot meals that start with searing. Saucepans are better for tasks involving mostly liquid—heating milk, making sauces, cooking rice. Choose this casserole for dishes requiring both browning and simmering in the same pan.
Can I brown meat properly in a ceramic non-stick pan?
You can brown meat on low-medium heat, but ceramic non-stick won't achieve the same depth of browning as stainless steel or cast iron. The wide, shallow casserole shape helps by providing good surface area for spreading ingredients out. Ensure the pan is properly preheated, pat meat dry, and don't overcrowd. For deep browning and fond development, stainless steel or cast iron performs better, but this casserole provides adequate browning for most home cooking.
Can I use this for rice pilaf or risotto?
Yes, this casserole works well for both. The wide surface allows you to sauté aromatics (onions, garlic) before adding rice and liquid. The 20cm holds risotto for 4 people; the 24cm for 6 people. The glass lid lets you monitor liquid absorption without lifting. The non-stick surface makes stirring risotto easier and cleanup simpler than stainless steel.
Is the lid oven safe to the same temperature?
The tempered glass lid's oven temperature rating may differ from the pan's 220°C limit. Check the lid for specific markings or contact GreenPan for confirmation. Glass lids typically tolerate oven temperatures, but the handle or rim seal may have lower limits. If in doubt, use the casserole in the oven without its lid or below 180°C with the lid.
Can I cook pasta in the 20cm or 24cm casserole?
Yes, but with limitations. The 20cm (3.1L) accommodates pasta for 2-3 people with adequate water. The 24cm (4.9L) handles pasta for 4-5 people. For larger quantities or if you prefer more generous water volume, a dedicated 6L+ pasta pot works better. These casseroles are more versatile than pasta pots but offer less capacity for boiling tasks.
Why does this have 25% more cooking surface?
GreenPan's Copenhagen range uses an optimised shape with slightly lower, more angled sides compared to traditional casserole designs. This increases the flat base area, providing approximately 25% more usable cooking surface. For browning ingredients or one-pot meals, this means less crowding and better heat contact with food.

Care & Use Instructions
Before first use: Wash with warm soapy water, dry thoroughly, then lightly oil the interior surface. Heat the casserole on low for 2-3 minutes, wipe away excess oil, and allow to cool. This prepares the ceramic coating for use.
Daily cleaning: Hand wash the casserole and lid with warm soapy water and a soft sponge. Whilst dishwasher safe, hand washing significantly extends the coating's lifespan. Clean the glass lid separately, taking care with the steam vent. Avoid abrasive scrubbers or harsh cleaning agents.
Cooking technique: Use low to medium heat only. Ceramic non-stick performs best at moderate temperatures and aluminium heats quickly. Preheat gradually for 1-2 minutes before adding food. For browning, allow meat to develop a crust before turning. Use a small amount of oil or butter—ceramic requires some fat for best results and coating longevity.
Critical: Avoid cooking sprays. Aerosol cooking sprays contain propellants and additives that create buildup on ceramic coatings, reducing non-stick properties over time. Use liquid oil applied with a brush or paper towel instead. This is the most common cause of premature coating failure in ceramic cookware.
Hob to oven cooking: This casserole excels at dishes that start on the hob and finish in the oven—braised lamb shanks, pot roasts, baked pasta dishes, or cassoulet. Brown ingredients on the hob with the lid off, add liquid, bring to a simmer, then transfer to the oven with the lid on. Check the lid's specific oven temperature rating before use.
Avoid: High heat (permanently damages ceramic coating), thermal shock (don't plunge hot pan into cold water), metal utensils (scratches coating), and leaving empty pan on heat.
Restoring performance: If food begins to stick, make a paste of bicarbonate of soda and water, gently scrub the interior, rinse thoroughly, and re-season with oil. This removes buildup and can restore some non-stick properties.

Frequently Asked Questions
What if I choose the wrong size?
Return it and exchange for the other size. Our no quibble guarantee covers used items—if you've tried it and realised you need a different capacity, we'll exchange it. This applies even after you've cooked with it.
How does the warranty work?
GreenPan provides a limited lifetime guarantee on the pan body and a 5-year guarantee on the non-stick coating. If you experience manufacturing defects, contact us with your proof of purchase and we'll coordinate with GreenPan. Normal wear and tear on the coating isn't covered, but our half-price replacement policy may apply for accidental damage within 2 years.
Can I use this on high heat?
No, ceramic non-stick should only be used on low to medium heat. High heat permanently damages the coating's non-stick properties. This is particularly important with aluminium pans, which heat quickly. Medium heat is sufficient for all tasks suited to this casserole.
Will the handles get hot on the hob?
The stainless steel handles are designed to stay cool during normal hob use due to their distance from the heat source and hollow construction. However, they will become hot in the oven or during extended cooking at higher heat. Use oven gloves when handling pans that have been in the oven or cooking for extended periods.
Can I buy a replacement lid if it breaks?
GreenPan may sell replacement lids separately, though availability varies. Universal glass lids in 20cm or 24cm are also available from various manufacturers. Measure the interior rim diameter of your casserole to ensure proper fit. Contact us on +44 1737 222996 to check if we stock compatible replacement lids.
How does the Half-Price Replacement guarantee work?
Valid for 2 years from purchase date. If you accidentally damage this casserole, we'll replace it at half price with proof of purchase and evidence of damage. Photos are acceptable. This covers accidental damage not included in the manufacturer's warranty.
Why is hand washing recommended if it's dishwasher safe?
Dishwashers use harsh detergents and high temperatures that can dull the exterior finish and gradually degrade ceramic coatings. Hand washing with mild soap preserves both the non-stick properties and the matte black exterior appearance. This applies to most premium non-stick cookware.
How long does delivery take?
Standard delivery to mainland UK addresses can take up to 7 working days, but is usually 3-4, and is free for orders over £49. Next day delivery may be available for £9.95 on orders placed before 1pm Monday to Thursday, depending on your location and our stock levels. You can also collect from our shops in Cobham or Reigate, or our warehouse in Redhill.
