The 18cm is the size most people reach for. In our experience, the 18cm saucepan ends up being the workhorse of the three. It is large enough for most everyday jobs but not so large that it feels unwieldy for a simple sauce or a couple of portions of vegetables.
Ceramic coatings suit saucepan use particularly well. Saucepans spend most of their time at moderate, sustained temperatures, which is exactly where ceramic non-stick surfaces perform at their best. You are less likely to run into the high-heat limitations that can affect ceramic coatings in frying pans.
A little oil or butter still makes a difference. Even with a quality non-stick surface, adding a small amount of fat when making sauces improves the flavour and helps the coating stay in good condition over time.
Capacity matters as much as diameter. The 16cm pan holds 1.9 litres, which is enough for a portion of soup or a small sauce but can feel limiting if you are cooking for more than one. If you regularly cook for two or more, the 20cm at 3.8 litres gives you much more headroom.
