Before first use: Wash the grill in warm, soapy water, rinse thoroughly, and dry completely. No seasoning is required - the vitreous enamel coating is ready to use.
Preheating: Preheat the grill for 3-5 minutes on medium heat before adding food. Cast iron takes longer to heat than other materials but retains heat exceptionally well. Test readiness by sprinkling a few drops of water on the surface - they should sizzle and evaporate quickly.
During cooking: Use medium heat for most grilling. Cast iron's heat retention means high temperatures are rarely necessary and can cause food to burn. Lightly oil food rather than the pan to prevent sticking. We recommend silicone, wooden, or heat-resistant plastic tools, though metal utensils may be used with care on the satin black finish.
Achieving grill marks: Resist the temptation to move food too soon. Allow each side to cook undisturbed for several minutes to develop proper grill marks. Food will release naturally when ready to turn.
Cleaning: Allow the grill to cool slightly (never plunge hot cast iron into cold water).
