The hard anodising process transforms the aluminium through an electrochemical treatment, creating an extremely hard, durable surface layer that conducts heat efficiently. This construction provides rapid, even heat distribution across the entire base and up the sides, eliminating hot spots that cause uneven cooking or burning. The result is consistent, reliable performance whether you're searing steaks, simmering Bolognese, or frying eggs.
The toughened non-stick coating represents Le Creuset's best-ever non-stick technology. Independently laboratory tested, it's 4x stronger than standard non-stick coatings and resists metal utensil abrasion. This robustness means occasional contact with metal spoons or spatulas won't damage the surface - though Le Creuset recommends silicone, wooden, or heat-resistant plastic tools for maximum longevity. The coating releases food instantly, making cooking and cleaning effortless.
The deep sides - 9.6cm high - transform this beyond a standard frying pan. Food stays safely contained during cooking rather than escaping onto your hob, and the extra depth accommodates sauces, stews, and braised dishes that would overflow in shallow pans. This versatility means one pan handles multiple cooking techniques: frying, sautéing, simmering, braising, and shallow stewing. The generous depth also makes this excellent for batch cooking.
Critical for non-stick longevity: use only low to medium heat. Non-stick coatings degrade when exposed to high temperatures. The hard anodised construction's excellent heat distribution means medium heat provides sufficient cooking temperature even for searing and high-heat frying. This heat limitation protects your investment and ensures years of non-stick performance.
Size selection depends on your cooking needs. The 24cm suits 1-2 people for everyday frying and small portions - compact with a single handle. The 26cm accommodates 2-3 people and represents the most versatile size for average households. The 28cm handles 3-4 people, larger portions, and batch cooking. The 30cm accommodates 4-6 people, family meals, entertaining, and substantial one-pot dishes. The helper handles on larger sizes prove invaluable when pans are full of food.
Suitable for those seeking quality non-stick cookware that lasts, anyone wanting versatile pan for multiple cooking techniques, busy families who need durable everyday cookware, those building quality kitchen collections, and as practical gifts for students or anyone setting up a kitchen.
What Customers Ask About Le Creuset Toughened Non-Stick Deep Frying Pan
What makes this a 'deep' frying pan?
The high sides (9.6cm) make this pan deeper than standard frying pans, preventing food from escaping onto your hob during cooking. This design makes it ideal for simmering sauces and stews as well as traditional frying tasks, offering versatility beyond a standard shallow frying pan.
Can I use metal utensils with this non-stick pan?
While Le Creuset's Toughened Non-Stick range has a stronger coating than most other non-stick pans, we would still say it's best not to. If you do use metal utensils, avoid harsh scraping or knocking against the rim. We recommend silicone, wooden, or heat-resistant plastic tools for maximum coating longevity. Never use knives, sharp tools, or electric beaters.
What is hard anodised aluminium?
Hard anodising is an electrochemical process that transforms the aluminium surface, creating an extremely hard, durable layer that conducts and distributes heat efficiently. This construction provides excellent heat distribution for even cooking whilst being lighter than stainless steel and more durable than standard aluminium.
Why can I only use low to medium heat?
Non-stick coatings degrade when exposed to high heat, losing their properties and potentially releasing fumes. The hard anodised construction's excellent heat distribution means low to medium heat provides sufficient cooking temperature for all tasks including frying and searing. This heat limitation protects the coating and ensures long-lasting performance.
Can I use this on my induction hob?
Yes, this pan is suitable for all cooktops including induction. Use an appropriately sized hob ring and avoid the induction 'boost' function which is only for rapidly heating large water volumes. Never slide the pan on glass-topped hobs - always lift to move.
Is this oven safe and to what temperature?
Yes, the pan is oven safe up to 260°C including the handle. If using with a Le Creuset glass lid, the maximum temperature is 220°C (Gas Mark 7). Remember the low-medium heat limitation still applies in the oven. Always use oven gloves when handling. Not suitable for microwaves.
Which size should I choose?
24cm suits 1-2 people for everyday frying, omelettes, small portions. 26cm is ideal for 2-3 people, versatile for most family meals. 28cm handles 3-4 people, larger portions, batch cooking. 30cm accommodates 4-6 people, family meals, entertaining, one-pot dishes. Consider your household size and typical cooking quantities.
Should I use oil with non-stick pans?
The non-stick coating allows fat-free cooking if desired - preheat on medium for 2 minutes then add food. However, a small amount of fat improves flavour, aids browning, and helps maintain the coating's performance over time. Either approach works with this toughened coating.
Can this go in the dishwasher?
Whilst dishwasher safe, hand washing in warm soapy water is strongly recommended to extend the non-stick coating's life. Dishwasher use over prolonged periods may damage the non-stick surface due to harsh detergents. Hand washing takes moments and preserves performance for years.
Why shouldn't I slide this on glass-topped hobs?
Sliding can damage both the pan base and the glass surface. The hard anodised base, whilst smooth, should always be lifted on and off or across glass-topped hobs to prevent scratching or other damage. This applies to ceramic, induction, and halogen glass surfaces.
What We've Learned About Non-Stick Cookware Since 1972
After five decades of selling non-stick pans, we've learned that coating quality varies enormously. Le Creuset's toughened non-stick - independently tested to be 4x stronger than standard - represents genuine engineering advancement rather than marketing claims. The metal utensil resistance means occasional contact won't ruin the pan, though we still recommend softer tools for maximum longevity.
The deep sides transform versatility beyond what most customers initially realise. This isn't just a frying pan - it's a multi-purpose workhorse that handles sauces, stews, and braises alongside traditional frying. The 9.6cm height means food stays contained, and you can tackle cooking techniques that would overflow in shallow pans. Combined with the toughened non-stick, this becomes genuinely versatile everyday cookware.
Hard anodised construction matters. Cheap thin pans develop hot spots despite non-stick coatings, causing sticking and uneven cooking. The hard anodised aluminium distributes heat evenly, making the non-stick coating work properly whilst protecting it from heat damage. And the critical mistake we see repeatedly: using high heat with non-stick pans permanently damages coatings. Medium heat with this construction cooks just as effectively whilst protecting your investment.
Specifications
Care & Use Instructions
Before First Use: Remove all labels and packaging. Wash thoroughly in warm soapy water, rinse, and dry completely.
Preheating: Place the pan on an appropriately sized hob ring and heat on low to medium for 1-2 minutes. Never use high heat. Add a small amount of fat if desired, then add food.
Temperature Limitation - Critical: Use only low to medium heat, never high heat. Non-stick coatings degrade when exposed to high temperatures. The hard anodised construction's excellent heat distribution means medium heat provides sufficient cooking temperature even for searing and high-heat frying.
Fat-Free Cooking: To cook without fat, preheat on medium for approximately 2 minutes, then add food directly. However, a small amount of butter or oil improves flavour, aids browning, and helps maintain coating longevity.
Never Use Cooking Sprays: Cooking sprays contain additives that build up on non-stick surfaces, creating sticky residue. Use butter or oil instead.
Utensil Selection: Le Creuset silicone, wooden, or heat-resistant plastic tools are recommended. Metal utensils can be used with care - no harsh scraping or knocking against the rim. Never use knives, sharp tools, electric beaters, or blenders in the pan.
During Cooking: Never leave the empty pan unattended on heat - this can damage the coating. The deep sides allow simmering, braising, and stewing beyond traditional frying. Use appropriately sized hob rings to prevent handle and side damage.
Induction Hob Use: Never use the 'boost' function - it's only for rapidly heating large water volumes. Use standard induction settings on low to medium power.
Glass-Topped Hobs - Critical: Never slide the pan on glass-topped hobs (ceramic, induction, halogen). Always lift to move the pan on or off the surface, or across it. Sliding can damage both the pan base and the glass surface.
Oven Use: Oven safe to 260°C (220°C with glass lid), but remember the low-medium heat limitation still applies. Use for finishing dishes or keeping warm. Place on shelf or rack, never on oven floor. When using under grill, maintain at least 5cm gap between heat source and pan.
Staining: Cooking ingredients with low smoking points (such as butter) at higher temperatures can cause staining to the cooking surface. This doesn't affect performance but may discolour the coating.
After Cooking: Allow the pan to cool for a few minutes before washing. Never plunge hot pans into cold water or fill hot pans with cold water - thermal shock can damage both the pan and coating.
Daily Cleaning: Hand wash in warm soapy water with a soft sponge or cloth. This is strongly recommended over dishwasher use. Rinse thoroughly and dry completely. Hand washing takes moments and significantly extends coating life.
Stubborn Residue: For stuck-on food, soak in warm soapy water briefly, then clean with a soft sponge. Never use abrasive scourers, metal pads, steel wool, harsh chemicals, or very stiff brushes that can damage the coating.
Dishwasher Use: Whilst dishwasher safe, prolonged dishwasher use may damage the non-stick surface due to harsh detergents and high temperatures. Hand washing is strongly recommended.
Storage: Store with care. If stacking with other cookware, place a soft cloth or paper towel between pans to prevent scratching the non-stick surface.
Avoid: High heat (most critical), cooking sprays, thermal shock (hot to cold water), harsh abrasives, sharp implements, electric beaters, overheating empty pan, sliding on glass-topped hobs.
