Both Babette and Jeanne have had quite an influence on how I cook, not that I do a lot even now with Babette gone, but I do a little more than I used to! What I have done for many years though, are my Saturday lunch time fry-ups which is typically quite simple fare of bacon (Sainsbury’s Oak smoked thin sliced Pancetta), fried eggs, toast (Babette’s homemade, more recently Vanessa’s home made or Gails sourdough), occasionally baked beans (Heinz of course), a mug (Le Creuset, naturally) of Lady Grey and salt and pepper. This, to me and the children (and when I started they actually were children), was as close to food heaven as Dad could get on a Saturday lunch time, after a hard morning of either homework or housework.So, returning to my opening statement. The influence that they both had was in the choice of pan I use. I gradually realised, over the years, that sometimes the eggs tasted a whole lot better when cooked in our Demeyere uncoated stainless steel frying pan (their preference), rather than non-stick (my choice for many years) and this was because the uncoated pan can safely be taken to higher temperatures than their non stick covered cousins, and so the resulting caramelisation (browning on the bottom) of the sugars in eggs gave so much more flavour than the slightly anaemic white efforts that the coated pan produced. And of course eggs cooked in the fat of the bacon will only improve matters further! A 20cm Casserole, which is a good size for say 2-3 people and a 24cm Chefs pan which, in my point of view, sadly has a non-stick coating on it. Sadly, because if ever there’s a case for not needing a coating, it’s probably a nice deep chefs pan. Be that as it may, both are coated and the majority of the market demands that it be so. So, if you ignore what I’ve told you in my opening paragraphs, then these two pans could be found useful jobs to do in your kitchen.

Ok ,that’s it for now. And at some point a little more gentle DIY perhaps?

Sorry Rebecca I missed your question until just now. (April 18th)
Yes, bacon first and if it doesn’t leave a goodish amount of fat to cook the eggs then add a little more.
Heatwise, I use 6-7 (out of 10) on our induction hob, so probably a little higher than you’re suggesting. Be prepared for it to stick initially, and DONT try to move it until its cooked.

Very good. Love the 3ply uncoated. Have never made eggs in it!? So I’m really interested in trying this. Just so I don’t ruin the lunch, fry the bacon first? Then crack in the eggs? Low/med heat on gas?
