Stuffed Portobello Mushrooms

I know a lot of people are not a fan of mushrooms, but they are great for you and are full of vitamins. I, personally, love them and I cook with mushrooms a lot. They’re very versatile and are perfect for stuffing.
This is one of my "go to" BBQ recipes, but the filling can be anything (and everything) you like.
Ingredients
- 4 large Portobello Mushrooms
- 1 small red onion, finely chopped
- 1 green chilli, finely chopped/deseeded
- 2 tbsp’s breadcrumbs
- 2 cloves Garlic
- 75g grated Parmesan cheese
- Pinch of Oregano
- Pinch of Thyme
- Salt & Black Pepper
Method
- Remove the stalks from the mushrooms and finely chop.
- Chuck everthing into a food processor / blender and whizz.
- Press the mixture into the mushroom "bowls"
- BBQ on medium heat for 10 - 12 minutes (until mushroom is cooked and the cheese is melted)
- Enjoy!
