Stuffed Portobello Mushrooms

I know a lot of people are not a fan of mushrooms, but they are great for you and are full of vitamins. I, personally, love them and I cook with mushrooms a lot. They’re very versatile and are perfect for stuffing.

This is one of my "go to" BBQ recipes, but the filling can be anything (and everything) you like.


  • 4 large Portobello Mushrooms
  • 1 small red onion, finely chopped
  • 1 green chilli, finely chopped/deseeded
  • 2 tbsp’s breadcrumbs
  • 2 cloves Garlic
  • 75g grated Parmesan cheese
  • Pinch of Oregano
  • Pinch of Thyme
  • Salt & Black Pepper


  1. Remove the stalks from the mushrooms and finely chop.
  2. Chuck everthing into a food processor / blender and whizz.
  3. Press the mixture into the mushroom "bowls"
  4. BBQ on medium heat for 10 - 12 minutes (until mushroom is cooked and the cheese is melted)
  5. Enjoy!
