Supreme Satisfaction: Unleash your Inner Chef

 

I’ve an interesting offer for you this week. And this week I’ll try not to complain about time, or my lack of it, even if that’s how I’m feeling.

About this time last year, Bryony Dyer, Dexam’s MD came up with a great offer on this great range of stainless steel saucepans, frying pans, chef’s pan etc. And she’s pulled off the same trick again this year after negotiating hard with her factory owner.

One of the unusual features of the Supreme Range is that there are six sizes of uncoated saucepan from 12cm right up to 22cm, going up in 2cm steps (most manufacturers do just three sizes: 16cm, 18cm & 20cm) and in addition there’s a nonstick coated Milk Pan 14cm. Incidentally, the uncoated saucepans have the capacity measures etched inside the pan, that can be surprisingly useful. 

So, seven pans in all. And they are significantly lighter than the competition (Le Creuset 3Ply, Demeyere Atlantis or Samuel Groves 3 Ply). This is achieved whilst still doing a good job at distributing heat, which is an essential ingredient in any quality pan. And this ‘relative lightness’ is an advantage for people with arthritis or just with less strength in their wrists.

 

The three sizes of Frying pan have a good quality nonstick coating on them, which is what 80 or 90% of the market demands. For me this is a shame, as whilst nonstick has its place (frying bacon being an obvious example), for most, frying will give you tastier results cooking on an uncoated surface. With meat, for example, a really hot pan will seal the outside surface of the food instantly, keeping in juices and flavours. This happens because it has stuck firmly to the hot surface (therefore sealing), but then gradually releasing as the cooking continues*. Be that as it may, the three frying pans are accompanied by a two handled deeper Chef’s Pan, and here, like the saucepans, there’s not a speck of nonstick in sight. Hooray! So, a pan that’ll never wear out and is ready to give superb results ‘right from the off’ **. 
 
There is also a nonstick Pancake Griddle Pan and an uncoated Preserving Pan, sometimes called a Maslin, of 9 litre capacity.

*Turn the heat down by a third to a half straight away after adding the food to the pan, to avoid burning. What you are after here is a browning, or caramelisation of the outside, and this really adds to the flavour and enhances the look. 
**If you are not used to cooking on uncoated pans, you are very likely to make a few mistakes before you get it right. A little patience will pay big dividends in the end. Last word
 
I’ll leave the last words to Kevin Warren, CEO of the Chicago Bears football team. Not an obvious sounding candidate perhaps for words of profundity, but bear with me! 

A friend sent me a link to an interview he had with Simon Sinek the other day.  And whilst there were four interesting points that he made, I felt his observations on the way we treat our phones were the most thought provoking.

He said this:

If we treated each other the way we treat our phones, the world would be a much better place”.

A bit of an odd statement you might think?  He justifies this thought by adding

Before we go to bed we plug it in, making sure its charged up. When we wake up in the morning we check it. When the screen is cracked we go and get a new screen. If it breaks down you will move heaven and earth to get it seen to, there and then. When you get off a plane, on a plane, out of a train, or into your car you check that you’ve got your phone”.

So, maybe he’s justified in his observation when he concludes, that if we treated our relationships with our significant others, our partners, our children, our parents, our colleagues, all with same diligence that we do in checking our phones, “this would be a magical world”. 


I think he has a point.
