Banana Pancake Recipe (Egg-Free)
A Pancake recipe that is suitable for children with allergies and tastes good too.
We have our friend and Business Advisor, Rob hartfield, to thank for this recipe. It is one he uses for his son who has an egg allergy but it has now become THE pancake recipe for his whole family - try it yourself for a delicious alternative. (It can also be used to make great waffles!)
250g plain flour
4 tsp baking powder
Quarter tsp salt
470ml soy milk (can use other dairy alternatives e.g. Oatly or cows milk if no dairy allergies)
60ml veg oil
Half a large ripe banana, mashed (Rob uses a whole ‘kids size’ one)
1 tsp vanilla extract
Mix all the dry ingredients in a bowl. Use a stick blender (or whatever you have) and whizz together oil, banana, vanilla and a little milk. Gradually add all the milk.
Pour the mixture into the dry ingredients and stir.
Ideally leave for an hour and then get frying and tossing!
