These Cheese Pastry Biscuits are ideal for snacking on and great for buffets, picnics, after school snacks and whenever else you need a cheesy treat.


Ingredients

  • 300 g white spelt flour
  • 250 g cold butter, cubed
  • 90 g grated Italian hard cheese
  • 6 g sea salt
  • 2 tbsp chopped rosemary
  • 2 egg yolks

GLAZE

  • 1 beaten egg white for brushing
  • Fleur de sel

Method

  1. Preheat the oven to 180°C (conventional oven)
  2. Line 1–2 baking trays with baking parchment.
  3. Place the ingredients for the dough in the Stand Mixer bowl and work into a crumbly pastry dough using the flat beater (speed setting 2–4).
  4. As soon as the dough is mixed, roll it out to a thin layer (approx. 7 mm) between two sheets of cling film and place in the refrigerator for 30 minutes.
  5. After removing from the refrigerator, use a round cookie cutter to cut out circles and place the circles on the baking trays.
  6. Then gather up the remaining dough and roll out again.
  7. Repeat until all the dough has been used up.
  8. Brush the circles with the egg white and sprinkle with a little fleur de sel.
  9. Bake in the pre-heated oven for 14–16 minutes.
